Cookies… for snack? Oh, yes! These Gluten-Free Peanut Butter Cookies are a real treat—and they’re the perfect pre-workout pick-me-up. My good friend and fitness trainer, Linda Fraser, introduced me to this recipe and I have been hooked ever since.
The peanut-butter protein gives me the strength and stamina I need to get through a vigorous workout, while the carob chips add a touch of guilt-free indulgence. Yes, they do contain a bit of brown sugar, but sometimes a little sweetness is okay. It’s all about moderation, right?
In addition to being gluten-free and dairy-free, they’re super simple to make. You can whip up a batch for the week in less than 20 minutes. And it’s likely you already have most (if not all) of the ingredients in your pantry.
I love to eat these cookies with a cold glass of Coconut Kefir. It’s my Gut Girl take on cookies and milk! Afterward, I’m energized and ready to hit the gym. Plus, they make me happy, as cookies tend to do. Thanks, Linda!
Gluten-Free Peanut Butter Cookies
2 cups peanut butter
1 cup organic brown sugar
½ cup honey
2 tsp. baking soda
1 tsp. vanilla extract
1-2 handfuls carob chips, optional but highly recommended!
- Preheat the oven to 350° F.
- Mix all ingredients in a large bowl.
- Form into 24 little balls and place on a cookie sheet. Press the tops with a fork to flatten.
- Bake for 10 minutes. Let cool.
Gut Girl Note: If enjoying for dessert, leave out the carob chips. Don't flatten completely before putting the cookies in the oven. When you remove them, top with a piece of dark chocolate or a Hershey Kiss. Carefully press down just a bit to set. Let cool.
